Day 1, CANCUN - MERIDA

Day 2, MERIDA - HENEQUEN HACIENDAS: YAXCOPOIL AND SOTUTA DE PEON ESTATES - LOCAL COMMUNITIES YAXCOPOIL, MUNA & TECOH - LIVESTOCK RANCH IN MUNA, MEXICO
- After a tasty Mexican breakfast (surely at some point you will try famous Mexican “Chilaquiles” for breakfast with red or green sauce, delicious anyway) you will leave to know main agriculture and agro - industry production brought great splendor to Yucatan in the XIX and XX Century: the Henequen also known as Sisal (which is one agave specie plant, not the same as the Blue Agave from which Tequila is produced) there are hundreds of Agave plants species in México.
- First it will be visited what is considered one of the biggest and most important Estate (Hacienda) in Yucatan of all times, San Geronimo de Yaxcopoil founded in XVII at a distance of 37 kilometers from Mérida, capital of Yucatan. It has been witness of most important economic and social changes in Yucatan from the colonial times to our times. At peak of it greatness the estate Yaxcopoil had 11,000 hectares of land dedicated mostly to the henequen production. It reached at its great moment in XVIII and XIX century an immense extension (now has just 3% of that land extension). It is interesting that the farm estate is owned by one of descendant of the family who bought it in XVIII.
- Production of Henequen finalized at Hacienda Yaxcopoil on 1984 (37 years ago) when it was obvious producing henequen was not any more a profitable business after more than 100 years of production.
- Now it is sort of a museum showing the grandeur of these old times in Yucatán between 1850 to 1950 when the boom of the henequen production. It brought so much richness that it was named as the “green gold”. You will see the prosperity it brought to Yucatan and particularly to Mérida when walking through the city, especially if you walk on magnificent European stylish Paseo de Montejo’s avenue where many big mansions were built, illustrating the economic power generated by the Henequen to the high class in Yucatán.
- After you will see small Mexican town of Yaxcopoil, local community of Mayan origin, you will visit in Muna, México a livestock farm with above 1400 sheeps used for genetic reproduction as well as the meet local consumption in Yucatán, Mexico. On this Mexican Ranch they have different sheep breeds including Pelibuey.
- Also at this “Garrido´s farm” one of best Yucatan livestock farm they raise cattle, in particular European Swiss, and grey and red Brahman also for reproduction and genetic basically. For approximately 1.30 hours will go around the livestock farm to see how the Mexican experts manage the ranch, issues like the water supply, food pasture, procedures to keep healthy animals, etc.
- Finally you will visit Estate Hacienda Sotuta de Peon in Tecoh, México. Upon arrival you will have a Mexican luncheon in the Hacienda´s local restaurant.

- You will learn about the industrial process to obtain the henequen fiber and produce the cords and rope for industrial use. Essentially consist of defibrating the Sisal leaf, cleaning and depurating the fiber already obtained after defibration process, drying the fiber and merging the thick fibers into the final product like cords or rope. - Back to Mérida, and to the Hotel to enjoy a leisure time in México. This evening is perfect to discover Mérida on your own, you will see a very active local nightlife, a city with an strong culture activity, with many theaters and good restaurants of Mexican and Yucatan cuisine as well as international food like Japanese, Italian, French, Lebanese, international food with the Mexican touch. Enjoy a lively small Mexican city, very safe Mexican place, where tourist from all over the world are very welcome. Day 3, MERIDA - OXKUTZCAB, MEXICO - MERIDA, YUCATAN
- Today is a special day on this Mexico agricultural tour! You will learn a lot about today's agriculture in Mexico visiting OXKUTZCAB County, considered the most productive agriculture´s region in Mexico´s south. You will see a combination of old traditional way of farming in Mexico and as the “Mayan Milpa” crop system as well as modern farming techniques in Mexico´s agriculture, all very alive in Mexico´s agriculture today.
- The fertile land on this agriculture Mexico´s region is key in the production of citrus (lemon, oranges, grapefruit and mandarins between others citrus), also producing local avocados, fruits like guaba, mangos, mamey-zapote between others as well as many different vegetables crop like squash, tomatoes, cucumber, eggplant, yuca, banana, plantain, and a lot more.

Day 4, MERIDA - UXMAL MAYAN SITE - SANTA ELENA COUNTY, DZAN - MUNA - TIMUCUY - MERIDA
- You will visit today one of greatest Mayan archeological site: UXMAL in Yucatán, México. Considered by the experts as one of most beautiful Mayan archeological site in Mexico and one of greatest site of the Mayan’s world. Uxmal was one of most important Mayan city in the pre-Hispanic Mesoamerican world. Your local tour guide (born and raised in Yucatan) will explain to you many interesting details of this outstanding Mayan ruin. Uxmal is located at a distance of 83.4 kms from Mérida which will take around 1.10 hours drive. It is a Mayan site you couldn't miss when travel to Mexico´s south.
- After this superb Mexican heritage culture experience, you will go to see more agriculture, crops and farms in Mexico. First you will visit a Ranch dedicated to the persian-lime crop, they not only produce lime for the local markets but also export this citrus fruit to US and Canada. - Then you will travel to Muna, Yucatán this time to see the production of Habanero Chile hot pepper. Yucatán is one of biggest producer of Habanero Chile hot pepper in México, and one of great agriculture export they have. It won Origen Denomination certificate for the Habanero chile hop pepper for all the State and its 106 municipalities awarded by superior Mexican authority of intellectual property in Mexico (IMPI).
Process of producing Habanero Chile include nursery the new plants of Chile habanero pepper to be transplanted and planted by the farmers on its Ranch´s land. You will see in Muna, Yucatan one of mayor nursery habanero chile plants in Mexico who for years have been working on this field and has extended its production to other Mexican states like Campeche, Tabasco and Quintana Roo, Chiapas to mention few. - To end today´s tour of Mexico you will go to Timucuy, a rural Mexico town in Yucatan where you will visit a farm dedicated to agriculture using principles and methods of sustainable organic agriculture production. Day 5, MERIDA - CHABLEKA (MELIPONARIO) - PROGRESO - IZAMAL
Today you will be leaving Mérida, moving forward to west of Yucatan to visit 2 very significant Mexico towns: Progreso, one of main port of Mexico and the second biggest Mexican port in the Gulf of Mexico after Veracruz, and the beautiful Mexican small “magical town” of Izamal, one of best small town in Mexico. To see and enjoy Izamal is a must see great attraction in México, which most foreign visitors to Mexico want to see.
- 8:30 am Check Out Hotel, departing to Progreso, main port of Yucatán and one of the most important of Mexico in the Mexican Gulf.
- On the way, before you get into Progreso port city of México, you will visit a “Meliponario”, an special Apiario which is formed by a different honey-bee specie original from Yucatan known from the Mayan ancestors time, producing special class of honeybee very nutritive and with many health´s benefits. You will see a local Mayan descendant family with a Mayan medicinal botanical garden, who produce honey from Melipone Bee, which it will be one of great moment of your trip to Mexico, a non - forget nice Mexican experience.

Day 6, IZAMAL (City Tour) - CHICHEN ITZA - CENOTE IK IL - MAYAN COMMUNITY – VALLADOLID
- Today is an awesome day on your Mexican tour, you will visit most prominent and popular Mayan archeological site. Chichen-Itza was voted on Internet as “one of 7 greatest wonders of the Modern World”. It is the most famous Mayan city site known by the world. No words describe its greatness especially if you think it was built thousand years ago.
